Maddy's Birthday Part 1

Friday Jan 21st Was Maddy's Real Birthday! We had a fun night with just our Family opening presents and having Maddy's Birthday dinner. (Taco's... I love asking them what their favorite dinner is... because it's always something easy like spaghetti or tacos.) Anyhoo... Maddy really wanted an ice cream cake and I just did not want to spend that much on one... so we made our own version. I made some Jumbo Chocolate cupcakes. Cut out a 1/4 inch layer out of the middle and replaced it w/ grasshopper icecream. Then put the cupcake top on it and put them in the freezer. Then made mint buttercream icing and added that right before serving. Sprinkled w/ crushed oreos.... and voila. Happy Birthday girl!
